  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon ground caraway seeds
  • 1 red bell pepper, chopped
  • 1 large carrot, sliced

  • 1 bay leaf
  • 2 tablespoons tomato paste
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt (optional)
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Add the beef cubes and brown on all sides. Remove the beef and set aside.

Step 3

In the same pot, add the chopped onion and garlic, sauté until softened, about 5 minutes.

Step 4

Stir in the sweet paprika and ground caraway seeds, cooking for an additional minute to release their flavors.

Step 5

Add the red bell pepper and carrot slices to the pot, cooking for 5 more minutes.

Step 6

Return the browned beef to the pot, incorporating with the vegetables.

Step 7

Add the diced potatoes, beef broth, bay leaf, and tomato paste. Stir well to combine.

Step 8

Season with black pepper and add salt if desired.

Step 9

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 75-90 minutes or until the beef is tender and the vegetables are cooked through.

Remove the bay leaf, adjust seasoning if needed, and stir in the fresh parsley.

Step 11

Serve hot, garnished with extra parsley if desired.
