  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 3 bay leaves
  • 0.5 teaspoon black pepper
  • 1 cup chickpeas, cooked
  • 2 cups bok choy, chopped
  • 1 medium red bell pepper, sliced

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a large non-stick pan, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.
