Directions

Step 1

Start by making the brine: In a large pot, combine 8 cups of water, 0.5 cup of kosher salt, and 0.25 cup of sugar. Stir the mixture over medium heat until the salt and sugar dissolve completely.

Remove the pot from heat and let the brine cool completely before proceeding.

Once the brine has cooled, add the turkey breast to the pot, making sure it is fully submerged. You can use a plate to weigh it down if necessary.
