Ingredients

  • 2 large Russet potatoes
  • 2 tablespoons Olive oil
  • 2 tablespoons Greek yogurt
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Dried chives
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

Step 2

Wash the russet potatoes thoroughly and slice them as thinly as possible, ideally using a mandoline slicer for even slices.

Step 3

Place the potato slices in a large bowl with cold water. Soak for 10 minutes to remove excess starch and help the chips become crispier.

Step 4

Drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

Step 5

In a small bowl, combine olive oil, onion powder, garlic powder, salt, and black pepper. Mix well.

Step 6

Add the potato slices back to a clean, dry bowl. Drizzle the seasoned olive oil mixture over the potato slices and toss until all slices are evenly coated.

Step 7

Spread the potato slices in a single layer on the prepared baking sheets, ensuring none of the chips overlap.

Step 8

Bake in the preheated oven for 20-25 minutes, flipping the chips halfway through the cooking time, until they are golden brown and crispy.

Step 9

While the chips are baking, mix the Greek yogurt and dried chives in a small bowl to create the sour cream substitute.

Step 10

Once the chips are done, remove them from the oven and let them cool for a few minutes. They will crisp up further as they cool.

Step 11

Transfer the chips to a serving bowl and lightly toss with the Greek yogurt and chive mixture for a hint of ‘sour cream’ flavor.

Step 12

Serve immediately for best taste and texture.
