Ingredients

  • 1 cup cornmeal (medium grind)
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon paprika (optional, for extra flavor)
  • 0.25 teaspoon cayenne pepper (optional, for a spicy kick)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, bring the 2 cups of water to a boil over medium-high heat.

Step 3

Gradually whisk in the cornmeal, stirring continuously to prevent lumps. Lower the heat to medium-low and continue to cook, stirring frequently, until the mixture thickens and pulls away from the saucepan sides, about 5-7 minutes.

Step 4

Remove the saucepan from heat and stir in the olive oil, baking powder, salt, paprika, and cayenne pepper until well combined.

Step 5

Let the mixture cool slightly, then use a spoon or small cookie scoop to drop small mounds (about 1 teaspoon each) onto the prepared baking sheet. Leave some space between each puff as they will expand slightly during baking.

Step 6

Bake in the preheated oven for about 20-25 minutes, or until the maize puffs are golden and crispy on the outside.

Step 7

Remove from the oven and let them cool completely on a wire rack. The puffs will continue to crisp up as they cool.

Step 8

Store in an airtight container at room temperature for up to 5 days.
