Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 2 cups Whole wheat flour
  • 4 tablespoons Olive oil
  • 2 cups Low-sodium chicken broth
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Frozen peas
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 0.5 cup Low-fat milk
  • 2 teaspoons Baking powder
  • 1 teaspoon Thyme, dried
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped
  • 1 large Egg white

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut chicken breasts into bite-sized pieces. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add chicken and sauté until browned and cooked through, about 7-10 minutes. Remove from pan and set aside.

Step 3

In the same skillet, add another tablespoon of olive oil. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes or until vegetables are tender.

Step 4

Return the chicken to the skillet. Stir in the low-sodium chicken broth, peas, thyme, salt, and pepper. Bring to a simmer and reduce heat to low, allowing to simmer for 15 minutes.
