Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
To make the red pepper spread, cut the red bell peppers in half, remove the seeds and place them cut side down on the prepared baking sheet.
Roast the peppers in the preheated oven for about 20-25 minutes or until the skins are blistered and charred.
While the peppers are roasting, combine the whole wheat flour, quick-rise yeast, and salt in a large mixing bowl.
In a separate bowl, mix 1 cup of the warm water with the olive oil and honey, and stir until the honey is dissolved.
Make a well in the centre of the dry ingredients and pour in the wet mixture, adding the ground flaxseed, rolled oats, and sunflower seeds.
Stir together until a sticky dough forms, adding the remaining 0.25 cup of warm water as needed to reach the desired consistency.
Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for about 30 minutes or until doubled in size.
Once the peppers are done, remove them from the oven and place them in a bowl, covering it with plastic wrap to steam for 10 minutes.
After steaming, peel the charred skins off the peppers and place the flesh in a blender or food processor.
Add the balsamic vinegar, garlic clove, lemon juice, black pepper, and fresh parsley to the blender and blend until smooth. Adjust seasoning if necessary.
Preheat your oven again to 375°F (190°C).
Once the dough has risen, punch it down and shape it into a loaf.
Place the shaped dough into a greased loaf pan, cover, and let it rise again for about 15-20 minutes.
Bake the bread in the preheated oven for 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
