Ingredients

  • 4 medium Fresh apples
  • 2 cups Water
  • 1 whole Cinnamon stick
  • 2 tablespoons Lemon juice
  • 0.5 cup Honey
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

Wash and core the apples, then chop them into small pieces. There's no need to peel them unless desired.

Step 2

In a large saucepan over medium heat, combine the chopped apples and 2 cups of water.

Step 3

Add the cinnamon stick and bring the mixture to a simmer. Reduce heat to low, cover, and cook for about 20 minutes, or until the apples are very soft and breaking down.

Step 4

Remove the saucepan from the heat and let it cool slightly. Then, using a fine mesh strainer or cheesecloth, strain the apple mixture into a bowl, pressing to extract as much juice as possible. Discard the solids and cinnamon stick.

Step 5

Return the strained apple juice to the saucepan. Stir in the lemon juice and honey, and bring the mixture back to a gentle boil over medium heat.

Step 6

In a small bowl, mix the cornstarch with cold water until dissolved. Gradually stir this slurry into the boiling apple juice, whisking continuously to avoid lumps.

Step 7

Continue cooking the syrup over medium heat for another 5-8 minutes, or until it thickens to the desired consistency. The syrup should coat the back of a spoon.

Step 8

Remove from heat. Allow the syrup to cool before transferring it to a sterilized glass jar or bottle.

Step 9

Store the apple syrup in the refrigerator and use within 2 weeks. Shake well before each use.
