Ingredients

  • 1 4-pound whole chicken
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh basil
  • 4 cloves garlic
  • 1 medium lemon
  • 1 teaspoon ground black pepper
  • 1 cup low-sodium chicken broth
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken dry with paper towels and place it on a roasting pan with a rack.

Step 3

In a small bowl, combine olive oil, chopped rosemary, thyme, and basil.

Mince the garlic cloves and add half to the herb mixture. Save the rest for later.

Zest the lemon and mix the zest into the herb mixture, then cut the lemon into halves.

Season the inside of the chicken with half of the salt and pepper. Stuff the cavity with the remaining garlic and both lemon halves.
