  • 1 pound Lean ground turkey
  • 1 medium Onion, chopped
  • 2 medium Carrots, sliced
  • 2 medium Celery stalks, sliced
  • 3 Garlic cloves, minced
  • 6 cups Low-sodium chicken broth
  • 1 can (14.5 ounces) Diced tomatoes, no salt added
  • 2 medium Yukon gold potatoes, diced
  • 1 cup Green beans, trimmed and cut into 1-inch pieces
  • 4 cups Baby spinach leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large stockpot over medium heat. Add the ground turkey and cook until browned, breaking it apart with a wooden spoon, for about 5-7 minutes.

Step 2

Once the turkey is browned, add the chopped onion, sliced carrots, and sliced celery to the pot. Sauté the vegetables until the onion becomes translucent, about 5 minutes.

Step 3

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Stir in the low-sodium chicken broth and the can of diced tomatoes. Bring the mixture to a boil over medium-high heat.

Step 5

Add the diced Yukon gold potatoes and green beans to the pot. Reduce the heat to a simmer and cook until the potatoes are tender, about 15-20 minutes.
