Ingredients

  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 medium Bell Pepper, chopped
  • 2 stalks Celery, chopped
  • 1 large Carrot, diced
  • 1 15 oz can Canned Diced Tomatoes, with juice
  • 1 8 oz can Tomato Sauce
  • 1 15 oz can Kidney Beans, drained and rinsed
  • 1 15 oz can Black Beans, drained and rinsed
  • 2 tablespoons Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 0.5 teaspoon Cayenne Pepper
  • 2 cups Low-sodium Vegetable Broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Directions

Step 1

In a medium bowl, combine the TVP and boiling water. Stir briefly and let it sit for 10 minutes to rehydrate.

Step 2

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for about 3 minutes or until the onion begins to soften.
