  • 1 medium, diced zucchini
  • 6 cups low-sodium vegetable broth
  • 14.5 ounces canned diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 9 ounces whole grain or whole wheat tortellini
  • 4 cups baby spinach
  • 0.25 cup, chopped fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until translucent.

Stir in the minced garlic, sliced carrots, and sliced celery; stir frequently for another 2-3 minutes.

Add the diced zucchini and continue to cook for another 2 minutes.
