  • 12 ounces Lean turkey sausage
  • 2 tablespoons Olive oil

  • 2 sliced Celery stalk

  • 2 cups Low-sodium chicken broth
  • 14.5 ounces Canned diced tomatoes
  • 1 cup, uncooked Brown rice
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, add the olive oil. Remove the casing from the turkey sausage and cook it in the skillet, breaking it apart with a wooden spoon, until browned, about 5 minutes.

Once the sausage is browned, remove it from the skillet and set it aside on a plate lined with paper towels to drain any excess fat.

In the same skillet, add the diced onion, red bell pepper, sliced carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
