Ingredients

  • 1 pound lean beef stew meat
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 stalks celery stalks, sliced
  • 4 medium red potatoes, cubed
  • 4 cups low-sodium beef broth
  • 14.5 ounces canned diced tomatoes
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Step 3

Increase the heat to medium-high and add the lean beef stew meat. Cook until the meat is browned on all sides, about 6-8 minutes.

Step 4

Add the sliced carrots and celery to the pot. Stir and cook for another 5 minutes.

Step 5

Add the cubed red potatoes to the pot along with the beef broth, canned diced tomatoes (with their juice), bay leaves, and dried thyme.

Step 6

Stir in the salt and black pepper.

Step 7

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Step 8

Let the stew simmer for 1 to 1.5 hours, or until the meat and potatoes are tender.

Step 9

Stir occasionally and check the seasoning, adjusting with more salt and pepper if necessary.

Step 10

Once done, remove the bay leaves and discard.

Step 11

Serve hot, garnished with fresh chopped parsley.
