  • 1000 milliliters low-sodium chicken or vegetable broth
  • 400 grams diced tomatoes, no salt added
  • 100 grams kale, stems removed and chopped
  • 100 grams quinoa, rinsed
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon black pepper
  • 0.5 teaspoon sea salt

Directions

Step 1

Prepare all the ingredients by dicing the pork, onion, garlic, celery, carrots, and bell pepper.

Step 2

Heat the olive oil in a large pot over medium heat. Add the diced pork and cook until browned on all sides, about 5-7 minutes. Remove the pork from the pot and set aside.

In the same pot, add the onion, garlic, celery, and carrots. Sauté until the onions are translucent, about 5 minutes.
