Ingredients

  • 1 pound Lean pork bones
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 large Carrots, sliced
  • 2 Celery stalks, sliced
  • 2 medium Potatoes, diced
  • 2 Bay leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 cups Low-sodium chicken broth
  • 2 cups Kale, chopped
  • 0.25 cup Parsley, chopped
  • 1 Lemon, juice

Directions

Step 1

Rinse the pork bones under cold water to remove any bone fragments and impurities.

Step 2

In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.

Step 3

Add the garlic, carrots, and celery to the pot and sauté for an additional 5 minutes until vegetables start to soften.

Step 4

Place the rinsed pork bones into the pot. Pour in the low-sodium chicken broth and bring to a boil over medium-high heat.

Step 5

Reduce the heat to low and add the potatoes, bay leaves, salt, and black pepper. Let the soup simmer gently for 90 minutes, partially covered, occasionally skimming any foam that forms on the surface.

After 90 minutes, add the kale and continue to simmer for another 30 minutes until the kale is tender.

Remove the pork bones from the soup with tongs. Let them cool slightly, then pick off any remaining meat and return the meat to the soup.

Add the chopped parsley and lemon juice. Stir to combine and simmer for an additional 5 minutes.

Taste for seasoning and adjust salt and pepper if necessary.
