  • 6 cups low-sodium chicken broth
  • 1 can (14.5 ounces) diced tomatoes, no salt added
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 2 cups kale, chopped
  • 0.25 cup fresh parsley, chopped
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the pork cubes and cook, stirring occasionally, until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.
