Ingredients

  • 500 grams lean ground turkey

  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 400 grams canned tomatoes, crushed
  • 500 ml low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 0.5 teaspoon black pepper
  • 0 salt, to taste
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the chopped onion and garlic. Sauté until the onion becomes translucent, about 4-5 minutes.

Step 3

Add the lean ground turkey to the pot. Cook until browned, breaking it apart with a wooden spoon as it cooks, about 5-7 minutes.
