  • 1 red bell pepper
  • 1 small sweet potato
  • 1.5 cups brown or green lentils
  • 6 cups low-sodium vegetable broth
  • 1 14-ounce can diced tomatoes (with juices)
  • 1 bay leaf
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 0.25 teaspoon black pepper
  • 2 cups spinach leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon salt

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Dice the onion, mince the garlic, and slice the carrots and celery.

Add the onion to the pot and sauté for 3-4 minutes, until soft and translucent.

Add the garlic and sauté for an additional minute until fragrant.
