  • 1 pound lean ground chicken
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups low-sodium chicken broth
  • 1 15-ounce can diced tomatoes, no salt added
  • 1 15-ounce can kidney beans, rinsed and drained
  • 1 15-ounce can black beans, rinsed and drained
  • 1 cup sweet corn kernels, drained
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, red bell pepper, and green bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the ground chicken to the pot. Cook while breaking it apart with a spoon until it is browned and cooked through, about 7-8 minutes.
