Ingredients

  • 1 lb Lean beef stew meat
  • 2 tbsp Olive oil
  • 1 piece Medium onion, chopped
  • 3 pieces Garlic cloves, minced
  • 3 pieces Carrots, sliced
  • 2 pieces Celery stalks, sliced
  • 4 pieces Red potatoes, cubed
  • 4 cups Low-sodium beef broth
  • 2 tbsp Tomato paste
  • 1 piece Bay leaf
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Frozen peas
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the beef stew meat and brown on all sides, working in batches if necessary. Remove the beef and set it aside.

Step 2

In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for about 5 minutes until translucent.

Step 3

Stir in the minced garlic, cooking for another 1 minute until fragrant.

Step 4

Add the sliced carrots, celery, and cubed potatoes to the pot and cook for 5 minutes, stirring occasionally.

Return the browned beef to the pot. Pour in the low-sodium beef broth and add the tomato paste, stirring well to combine.

Add the bay leaf, dried thyme, dried rosemary, salt, and black pepper to the pot. Stir to mix the spices with the rest of the ingredients.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and let simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.

Ten minutes before the cooking time is up, add the frozen peas to the pot and stir them in.

Remove the bay leaf before serving. Sprinkle fresh parsley over the stew for garnish.
