Ingredients

  • 1 pound Lean ground beef (90% lean or higher)
  • 1 tablespoon Olive oil
  • 1 Large onion, diced
  • 1 Red bell pepper, diced
  • 3 Garlic cloves, minced
  • 28 ounces Canned low-sodium diced tomatoes
  • 15 ounces Canned low-sodium black beans, drained and rinsed
  • 15 ounces Canned low-sodium kidney beans, drained and rinsed
  • 15 ounces Canned low-sodium corn, drained
  • 1 cup Low-sodium beef broth
  • 2 tablespoons Tomato paste
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper (optional, to taste)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the dice onion and red bell pepper and sauté until the onion is translucent, about 5 minutes.

Step 2

Add the minced garlic and sauté for another 1 minute until fragrant.

Step 3

Increase the heat to medium-high and add the lean ground beef. Cook until the beef is browned, breaking it apart with a wooden spoon, about 7-8 minutes. Drain any excess fat.

Stir in the canned diced tomatoes with their juice, black beans, kidney beans, corn, and beef broth.
