  • 500 grams Lean beef stew meat
  • 2 tablespoons Olive oil
  • 1 whole Large onion, chopped
  • 3 whole Garlic cloves, minced
  • 3 whole Carrots, sliced
  • 2 whole Celery stalks, chopped
  • 1 whole Red bell pepper, chopped
  • 400 grams Canned diced tomatoes, no salt added
  • 500 milliliters Low-sodium beef broth
  • 3 medium Potatoes, peeled and cubed
  • 1 whole Bay leaf
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 170°C (340°F).

Step 2

In a large oven-safe pot or casserole dish, heat the olive oil over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until beginning to soften. Add the minced garlic and cook for an additional 1 minute.

Add the lean beef stew meat to the pan, cooking until browned on all sides, about 5-7 minutes.
