  • 3 celery stalks, sliced

  • 6 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) diced tomatoes, no-salt-added
  • 2 bay leaf
  • 1 teaspoon dried thyme
  • 1 cup frozen green beans
  • 1 cup frozen peas
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the lean beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Sauté for 5 minutes, until the onion is translucent.
