  • 1 teaspoon Ground turmeric
  • 0.5 teaspoon Cayenne pepper
  • 2 tablespoons Tomato paste
  • 14 oz can Diced tomatoes, with juice
  • 15 oz can Cooked kidney beans, rinsed and drained
  • 15 oz can Cooked black beans, rinsed and drained
  • 2 cups Vegetable broth
  • 2 medium Carrot, chopped
  • 1 large Red bell pepper, chopped
  • 3 cups Spinach, fresh
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, and cook for an additional 2 minutes until fragrant.

Mix in the curry powder, ground cumin, ground turmeric, and cayenne pepper. Stir continuously for 1 minute to toast the spices.
