In a small saucepan over low heat, combine the skim milk and pineapple juice until the mixture is just warm to the touch, about 105-115°F. Remove from heat.
In a large mixing bowl, combine warm milk mixture, honey, and olive oil. Stir until the honey is fully dissolved.
Add the instant yeast to the liquid mixture and set aside for about 5 minutes until it becomes frothy.
Whisk in the egg, vanilla extract, and salt until thoroughly combined.
Gradually add 2 cups of whole wheat flour and ground flaxseed to the wet ingredients, stirring with a wooden spoon until a sticky dough forms.
Slowly incorporate the remaining flour, 1/4 cup at a time, until the dough begins to pull away from the sides of the bowl.
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Add additional flour if necessary, but the dough should remain slightly sticky.
Place the dough in a lightly oiled bowl, turning it to coat all sides, and cover with a clean kitchen towel. Allow to rise in a warm place until doubled in size, about 1 to 1.5 hours.
Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them in a greased baking dish or on a parchment-lined baking sheet.
Cover the rolls with a kitchen towel and let them rise again until nearly doubled, about 30-45 minutes.
Preheat the oven to 350°F (175°C).
Bake the rolls in the preheated oven for 20-25 minutes, or until the tops are golden brown and the rolls sound hollow when tapped.
