Ingredients

  • 500 grams Lean beef sirloin
  • 1 cup Pineapple chunks
  • 0.25 cup Low-sodium soy sauce
  • 2 tablespoons Honey
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Ginger, freshly grated
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Olive oil
  • 1 medium Red bell pepper, sliced
  • 2 whole Green onions, chopped
  • 2 cups Brown rice, cooked
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Trim any visible fat from the beef sirloin and cut it into thin strips.

Step 2

In a bowl, combine low-sodium soy sauce, honey, rice vinegar, grated ginger, and minced garlic. Add the beef strips to this marinade, ensuring each piece is well-coated. Let it marinate for at least 15 minutes.

Step 3

While the beef is marinating, heat the olive oil in a non-stick skillet over medium-high heat.

Step 4

Add the red bell pepper slices to the skillet and sauté for 3-4 minutes until slightly tender.

Step 5

Remove the beef from the marinade, reserving the marinade for later.

Step 6

Add the beef strips to the skillet, cooking for 4-5 minutes or until they are browned and cooked through.

Step 7

Add the reserved marinade and pineapple chunks to the skillet. Stir and let it simmer for 2-3 minutes until the sauce thickens slightly.

Step 8

Season with black pepper to taste and sprinkle with sesame seeds and chopped green onions.

Step 9

Serve the beef mixture over a bed of cooked brown rice and garnish with fresh cilantro.
