Directions

Step 1

Chop the lean ham into small, bite-sized pieces. Slice the red bell pepper into thin strips and chop the green onions finely.

Step 2

In a medium bowl, whisk the egg whites together until slightly frothy. Add the salt and black pepper to the egg whites and mix well.

Step 3

Heat the olive oil in a non-stick skillet over medium heat. Add the green onions and red bell pepper to the skillet, sautéing for about 2-3 minutes, or until the vegetables begin to soften.
