Ingredients

  • 4 pieces whole grain croissants
  • 200 grams low-sodium, lean ham slices
  • 4 slices reduced-fat Swiss cheese
  • 60 grams baby spinach leaves
  • 2 tablespoons Dijon mustard
  • 1 medium avocado
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon unsalted butter
  • 1 teaspoon psyllium husk (optional for extra fiber)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Gently slice the whole grain croissants in half horizontally using a serrated knife.

Step 3

In a small bowl, mash the avocado until smooth. Stir in the Dijon mustard and ground black pepper to make a creamy spread.

If desired, mix the psyllium husk into the avocado spread for added fiber.

Spread a thin layer of the avocado mixture onto the inside of each croissant half.
