Ingredients

  • 500 grams Extra-lean ground beef
  • 2 tablespoons Olive oil
  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 3 medium Celery stalks, sliced
  • 1 large Red bell pepper, diced
  • 2 medium Russet potatoes, peeled and cubed
  • 4 cups Low-sodium beef broth
  • 2 tablespoons Tomato paste
  • 1 can Diced tomatoes, no salt added
  • 1 Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spoon as it cooks.

Step 3

Transfer the cooked beef to a plate, discard any excess fat, and set aside.

Step 4

In the same pot, add the chopped onion and minced garlic. Sauté for about 5 minutes until the onions are translucent.

Add the sliced carrots, celery, and diced red bell pepper to the pot. Sauté for another 5 minutes.

Step 6

Stir in the cubed potatoes, low-sodium beef broth, tomato paste, can of diced tomatoes, bay leaf, dried thyme, and rosemary.
