Ingredients

  • 1 medium Red bell pepper
  • 1 large Zucchini
  • 1 medium Red onion
  • 16 pieces Cherry tomatoes
  • 10 pieces Baby bella mushrooms
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 pieces Bamboo or metal skewers

Directions

Step 1

If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Step 2

Wash all the vegetables thoroughly.

Step 3

Cut the red bell pepper into 1-inch pieces.

Step 4

Slice the zucchini into 1/2-inch thick rounds.

Step 5

Peel the red onion and cut it into quarters. Separate the layers.

Step 6

In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.

Add the bell pepper pieces, zucchini rounds, red onion layers, cherry tomatoes, and baby bella mushrooms to the bowl. Toss until all the vegetables are evenly coated with the marinade.
