Ingredients

  • 4 slices Whole grain bread
  • 0.5 cup slices Red bell pepper
  • 0.5 cup slices Zucchini
  • 0.5 cup slices Eggplant
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 slices Reduced-fat cheddar cheese
  • 1 cup Baby spinach
  • 1 teaspoon Balsamic vinegar

Directions

Step 1

Preheat a grill pan over medium-high heat.

Step 2

In a bowl, combine red bell pepper slices, zucchini slices, and eggplant slices. Drizzle them with olive oil, and sprinkle with salt and black pepper. Toss to coat the vegetables evenly.

Step 3

Grill the vegetables on the preheated grill pan for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
