Ingredients

  • 500 grams Lean beef sirloin
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 units Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 1 unit Red bell pepper, cut into 1-inch pieces
  • 1 unit Red onion, cut into wedges
  • 200 grams Cherry tomatoes
  • 8 units Skewers

Directions

Step 1

Cut the lean beef sirloin into 1-inch cubes and place in a large mixing bowl.

Step 2

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, chopped parsley, black pepper, and salt to create the marinade.

Step 3

Pour the marinade over the beef cubes, mixing well to ensure each piece is thoroughly coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Step 4

While the beef is marinating, soak the skewers in water for at least 30 minutes to prevent them from burning.

Step 5

Preheat the grill to medium-high heat.

Step 6

Thread the marinated beef cubes onto the skewers, alternating with pieces of red bell pepper, red onion wedges, and cherry tomatoes. Make sure to leave space between each piece for even cooking.

Step 7

Place the skewers on the preheated grill. Cook for about 2-3 minutes per side, turning occasionally, until the beef is cooked to your preferred level of doneness and vegetables are slightly charred.

Step 8

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 9

Serve the skewers hot, with a squeeze of fresh lemon juice if desired.
