Ingredients

  • 16 pieces jumbo shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large bowl, whisk together olive oil, garlic, lemon zest, lemon juice, fresh parsley, red pepper flakes, salt, and black pepper to make the marinade.

Step 2

Add the jumbo shrimp to the marinade and toss until well coated. Cover the bowl and refrigerate for at least 15 minutes to allow flavors to meld.

Step 3

Preheat your grill to medium-high heat (about 400°F).

Step 4

Thread the marinated shrimp onto skewers, ensuring they are evenly spaced. You can use metal skewers or soak wooden skewers in water for 30 minutes beforehand to prevent burning.

Step 5

Place shrimp skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp turn opaque and have grill marks.

Step 6

Remove from the grill and let shrimp rest for a couple of minutes.

Step 7

Serve the grilled shrimp warm with a garnish of extra chopped parsley and lemon wedges on the side.
