Ingredients

  • 250 g haloumi cheese
  • 2 tbsp extra virgin olive oil
  • 1 medium lemon
  • 2 tbsp fresh mint leaves
  • 2 tbsp fresh parsley
  • 0.5 tsp black pepper
  • 200 g mixed salad greens
  • 150 g cherry tomatoes

Directions

Step 1

Preheat your grill to medium-high heat.

Slice the haloumi cheese into 1 cm thick slices.

Zest the lemon and set aside the zest. Then, juice the lemon to obtain about 2 tablespoons of juice.
