Ingredients

  • 2 medium Eggplants
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 tablespoon Fresh rosemary
  • 1 tablespoon Fresh thyme
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Sea salt
  • 2 tablespoons Basil leaves

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Slice the eggplants into 1/2-inch thick rounds.

Step 3

Lay the eggplant slices on a clean surface or tray. Lightly sprinkle them with sea salt and let them sit for 10 minutes to draw out any bitterness.

Step 4

Rinse the eggplant slices under cold water to remove the salt, then pat them dry with a paper towel.

Step 5

Peel and finely mince the garlic cloves.

Step 6

In a small bowl, combine the olive oil, minced garlic, chopped fresh rosemary, and chopped fresh thyme.
