Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium zucchini
  • 1 medium red onion
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 8 pieces wooden or metal skewers

Directions

Step 1

Cut the chicken breast into 1-inch cubes and set aside.

Step 2

Slice the red and yellow bell peppers, zucchini, and red onion into similar-sized chunks, about 1 inch.

In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, black pepper, and salt. Mix well to create the marinade.
