Ingredients

  • 4 pieces large artichokes
  • 1 whole lemon
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 quart water

Directions

Step 1

Fill a large pot with 1 quart of water and bring it to a boil.

Step 2

Trim the artichokes by cutting off the top third and removing any small leaves near the base. Trim the stems to about 1 inch, and use scissors to snip off the pointed tips from the remaining leaves.

Step 3

Rinse artichokes under cold water to remove any dirt or bugs nestled between the leaves.

Step 4

Add a pinch of salt to the boiling water and place the artichokes into the pot. Cover and simmer for about 15 minutes until the artichokes are just tender.

Step 5

While the artichokes are cooking, juice the lemon and mince the garlic cloves. In a small bowl, mix the lemon juice, olive oil, minced garlic, and chopped fresh parsley together. Season with salt and pepper to taste.
