Ingredients

  • 1 large Cucumber
  • 250 g Cherry tomatoes
  • 0.5 Red onion
  • 1 medium Green bell pepper
  • 75 g Kalamata olives
  • 100 g Low-fat feta cheese
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Dried oregano
  • 2 tbsp Lemon juice
  • 0.5 tsp Freshly ground black pepper
  • 0.25 tsp Salt

Directions

Step 1

Wash all the fresh vegetables thoroughly under running water.

Step 2

Peel the cucumber and slice it into thin rounds. Place them into a large salad bowl.

Step 3

Cut the cherry tomatoes in half and add them to the bowl with the cucumbers.

Peel and thinly slice half of a red onion and separate the slices. Add them to the salad mix.
