  • 500 grams boneless, skinless chicken breast

  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 180 grams low-fat plain Greek yogurt
  • 1 medium cucumber, diced
  • 1 medium red onion, chopped
  • 1 medium red bell pepper, chopped
  • 8 pieces wooden or metal skewers

Directions

Step 1

Cut the chicken breast into 2.5 cm (1-inch) cubes and place in a large mixing bowl.

Step 2

In a separate bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, oregano, thyme, pepper, and salt to make the marinade.
