  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium tomato, chopped
  • 2 cups low-sodium beef broth
  • 2 tablespoons curry powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and grated ginger, and cook for another 1 minute until fragrant.

Stir in the curry powder, cumin powder, coriander powder, ground black pepper, and salt. Cook for 1 minute to allow the spices to release their aromas.
