  • 2.5 cups Gluten-free all-purpose flour
  • 0.25 cup Coconut flour
  • 0.5 cup Tapioca starch
  • 2 teaspoons Xanthan gum
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.75 teaspoon Salt
  • 1 cup Mashed ripe banana
  • 0.5 cup Crushed pineapple, drained
  • 0.5 cup Pineapple juice
  • 0.25 cup Honey
  • 0.25 cup Olive oil
  • 3 tablespoons Egg substitute
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan with non-stick spray or line it with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, coconut flour, tapioca starch, xanthan gum, baking powder, baking soda, and salt. Stir until well mixed.

In another bowl, mix together the mashed banana, crushed pineapple, pineapple juice, honey, olive oil, egg substitute, and vanilla extract until smooth and fully combined.
