Ingredients

  • 500 g Korean rice cakes
  • 1 tbsp Olive oil
  • 2 Garlic cloves, minced
  • 2 tbsp Low-sodium gochujang (Korean red pepper paste)
  • 2 tbsp Low-sodium soy sauce
  • 1 tbsp Honey
  • 1 tsp Sesame seeds
  • 2 Green onion, sliced
  • 1 Carrot, thinly sliced
  • 100 ml Water
  • 100 g Fresh spinach leaves

Directions

Step 1

Soak the Korean rice cakes in warm water for about 10 minutes to soften them.

Step 2

In a large non-stick pan, heat 1 tablespoon of olive oil over medium heat.

Step 3

Add minced garlic to the pan and sauté for about 1 minute until fragrant.

Step 4

Drain the water from the rice cakes and add them to the pan, stirring to coat with the garlic-infused oil.

Step 5

Toss in the thinly sliced carrot and sauté for an additional 3 minutes until slightly tender.

Step 6

In a bowl, mix the low-sodium gochujang, low-sodium soy sauce, honey, and about 100ml of water to create a sauce.

Step 7

Pour the sauce mixture over the rice cakes and vegetables, stirring well to ensure everything is coated.

Step 8

Increase the heat to medium-high and let the mixture simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and rice cakes are cooked through.

Step 9

Add the fresh spinach and sliced green onion into the pan and stir gently until the spinach wilts, about 2 minutes.

Step 10

Remove the pan from the heat and sprinkle the sesame seeds over the dish before serving.

Step 11

Serve hot, and enjoy your heart-healthy Fried Tteokbokki with a side of steamed vegetables for an extra boost of nutrients.
