In a medium saucepan, combine 1.5 cups of almond milk and the packed cup of fresh mint leaves. Heat the mixture over medium-low heat until it begins to simmer. Remove it from the heat, cover, and let it steep for 30 minutes to infuse the milk with mint.
Strain the mint leaves from the milk using a fine mesh sieve, pressing down to extract as much liquid as possible. Discard the mint leaves and return the milk to the saucepan.
Add the honey and 0.5 cup of almond milk to the saucepan and warm over medium heat, stirring until the mixture is well combined.
In a small bowl, whisk the cornstarch with 0.5 cup of almond milk until smooth. Gradually add this slurry to the saucepan, stirring constantly until the mixture thickens slightly, about 5 minutes.
Remove from heat and stir in the vanilla extract and Greek yogurt until smooth.
Pour the mixture into a large bowl and cover with plastic wrap, pressing the wrap directly on the surface to prevent a skin from forming. Refrigerate until completely chilled, about 2 hours.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
Towards the end of churning, add the dark chocolate chips, if using, to the ice cream maker.
Transfer the ice cream to an airtight container and freeze for an additional 2-4 hours or until firm before serving.
