Ingredients

  • 500 grams fresh green beans
  • 150 grams cherry tomatoes
  • 1 medium red onion
  • 50 grams almonds, sliced
  • 2 tablespoons parsley, fresh
  • 3 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Trim the ends of the fresh green beans and cut them into 2-inch pieces.

Step 2

Bring a large pot of water to a boil. Add the green beans and blanch for 3-4 minutes until they are bright green and tender-crisp.

Immediately transfer the green beans to a bowl of ice water to stop the cooking process and preserve their color. Drain and set aside.
