Ingredients

  • 4 units Fresh corn cobs
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 unit Red bell pepper
  • 0.5 unit Red onion
  • 0.25 cup Fresh cilantro
  • 2 units Lime
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Husk the corn and remove silk. Cut the kernels off the cobs using a sharp knife.

Bring a large pot of water to a boil, add the corn kernels and cook for about 3 minutes. Drain and cool under cold running water to stop the cooking process. Set aside.
