Ingredients

  • 400 grams canned fava beans, low sodium
  • 200 grams plain Greek yogurt, low-fat
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons ground black pepper
  • 0.5 teaspoons sea salt
  • 2 tablespoons pomegranate seeds (optional for garnish)
  • 2 slices whole grain pita bread

Directions

Step 1

Rinse the canned fava beans under cold water and drain them well.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the drained fava beans to the saucepan. Pour in the lemon juice, ground cumin, ground black pepper, and sea salt. Stir continuously for about 5 minutes until the beans are warmed through and coated with the spices.

Step 4

While the beans are cooking, prepare the yogurt sauce by mixing the Greek yogurt with chopped parsley in a small bowl. Adjust seasoning with salt and pepper as needed.

Step 5

Once the fava beans are warmed and seasoned, remove them from the heat.

Step 6

To serve, divide the fava beans among four bowls. Top each serving with a generous spoonful of the yogurt mixture.

Step 7

Optionally, garnish each bowl with pomegranate seeds for a burst of color and flavor.

Step 8

Serve the Fool Bel Laban with slices of whole grain pita bread on the side for dipping.
