Ingredients

  • 1 package Whole wheat puff pastry sheets
  • 3 large Eggs
  • 1 cup Spinach leaves
  • 8 pieces Cherry tomatoes
  • 1 cup Low-fat feta cheese
  • 0.25 cup Skim milk
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Salt
  • 5 leaves Fresh basil leaves

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

On a lightly floured surface, roll out the whole wheat puff pastry sheets to smooth them and cut them into 6 equal squares.

Step 3

In a large pan, heat the olive oil over medium heat. Add the spinach leaves and sauté until wilted, about 2 minutes.

Remove the pan from the heat and stir in chopped cherry tomatoes, garlic powder, black pepper, and salt.

In a small bowl, beat 2 eggs with skim milk until well combined. Set aside.
