Ingredients

  • 12 ounces Whole wheat fettuccini
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 cups Unsweetened almond milk
  • 1 cup Low-sodium chicken or vegetable broth
  • 1 cup Nutritional yeast
  • 2 tablespoons Cornstarch
  • 0.5 teaspoon Freshly ground black pepper
  • 0.25 teaspoon Salt
  • 0.25 cup Fresh parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Bring a large pot of lightly salted water to a boil. Add the whole wheat fettuccini and cook according to package directions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

Step 3

In a separate bowl, whisk together the almond milk, chicken or vegetable broth, and cornstarch until fully blended.

Step 4

Pour the almond milk mixture into the skillet with the garlic and bring to a gentle simmer, stirring continuously until the sauce begins to thicken, about 3 to 5 minutes.

Step 5

Add the nutritional yeast, black pepper, and salt to the skillet. Stir until the nutritional yeast is completely dissolved and the sauce is creamy.

Step 6

Add the cooked fettuccini to the skillet, tossing to coat the pasta thoroughly with the sauce.

Step 7

Remove from heat and stir in the fresh parsley and lemon juice.

Step 8

Taste and adjust seasoning if necessary. Serve immediately, garnished with additional parsley if desired.
