Ingredients

  • 12 oz Whole grain fettuccine
  • 2 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 1 Yellow onion, chopped
  • 3 cups Cherry tomatoes, halved
  • 1 28 oz can Canned crushed tomatoes (no salt added)
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 0.5 tsp Red pepper flakes
  • 0.5 tsp Salt
  • 0.25 tsp Freshly ground black pepper
  • 0.5 cup Fresh basil leaves
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of lightly salted water to a boil. Add the whole grain fettuccine and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.

Step 3

Add the halved cherry tomatoes to the skillet and cook for an additional 5 minutes, allowing them to soften and release their juices.

Step 4

Stir in the canned crushed tomatoes, dried basil, dried oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a simmer, then reduce the heat to low. Let the sauce simmer for 10-15 minutes, stirring occasionally, until it thickens slightly.

Step 5

Adjust seasoning to taste, if necessary.

Step 6

Toss the cooked fettuccine in the skillet with the tomato sauce, ensuring the pasta is evenly coated.

Step 7

Serve the fettuccine hot, garnished with fresh basil leaves and an optional sprinkle of grated Parmesan cheese. Enjoy your heart-healthy meal!
